Everyone loves pancakes right ? 

it dawned on me today that I missed last weeks #wiaw, and yes, although i know how popular it is and that everyone really likes it (please hint my sarcasm) I may just have to drop doing it every week. 

Turns out Wednesdays are my busiest and sometimes less planned days. I know what your thinking.. WE ARE YOUR AUDIENCE WE DEMAND MORE, well i can only apologise for that one. Wednesdays are crazy for us here, unpacking bags from our stay in london, getting ready for work and nursery, sometimes i run out of hours in the day. 

BUT...i am going to keep posting a weekly recipe! They seem to be popular across the board so thats good, i mean a stack of pancakes get more likes than my face so i guess pancakes are what the people want! 

so with that being said, heres the recipe for my kinda healthy banana pancakes. 

What you will need;

1 banana 
2 eggs 
1 cup of brown rice flour 
splash of milk ( of your choice )
coconut oil

To Top; 
Greek yoghurt
honey
 mango

What to do; 

- Start off by mashing the banana 
-then add 2 eggs to the banana and mix until they are combined
- then add 1 cup of brown rice flour bit by bit until you have a thick batter. 
- add milk to your desired consistency 
- fry in 1 tea spoon of coconut oil. 

TIP; if you want to make a pancake stack like mine you will need to keep the mixture a a bit thicker, it also makes it easier to cook more than one at a time. 

To top add a dollop of Greek yoghurt, a drizzle of honey and some chunks of mango and Enjoy!

Pancakes are so quick and simple to make and you can pretty much add anything you like too them, sweet or savoury!
