Home made vegetable curry | #wiaw

Today has been an awful day on the food front. 

I missed breakfast *SIN OF THE WORLD* i wasn't hungry when i woke up and i had to go to the eye test and by the time i got back it was nearly half 10 so it was more of a brunch when i decided to have some scrambled eggs with some mushrooms and onions. 

i also missed lunch because i forgot to take it with me *BOOO* so i drank multiple cups of coffee. but i did make a vegetable curry before i went to work and i made enough for about 4 meals. 



so i made a promise to post a recipe every wednesday so heres my vegetable curry. 

what you will need;

- 1 large sweet potato 
- 1 large handful of spinach
-1 handful of mange tout 
-1 handful of mushrooms 
- handful and a half of broccoli 
-3 tablespoons of tinned kidney beans 
-3 tablespoons of cannellini 
-1 400ml can of tinned tomatoes 
-1 sachet of chicken curry slow cooker seasoning ( found here
- 1 onion 



what to do; 

- dice everything
-Microwave sweet potatoes for 6 mins- or untill soft 
- fry off the onion and mushrooms in olive oil until soft 
- add broccoli and mange tout 
- add tinned tomatoes 
-add seasoning, kidney beans and cannellini beans 
-now add sweet potatoes 
-add 200ml of water 
- Simmer for 10 mins
- throw in the spinach in the last 2 mins to cook through,

and your done! 

you can either serve on its own or with rice. 

this made enough for about 4 people or 4 meals. 

It was so tasty its a mild curry with a slight kick and it takes about 15 mins to cook. its completely veggie friendly too!
